Who better to predict the future than those who make a living predicting the future?
As Future Week marches on, we've been asking people from across the food space to weigh in on what they believe the future of dining will look like. But, seeing as this is about the future, we'd be remiss if didn't ask the people whose jobs are to actually predict it what they think. Read their responses (which have been edited and condensed) below, and send yours to future@eater.com. We'll round them up for a post tomorrow.

When Uranus goes into Taurus in the Tropical Zodiac, there is going to be a huge shift
in agriculture and farming methods. It is likely that we will move more toward sustainable agriculture and hydroponics. Overall, we will see a movement toward more of a plant-based diet. Also, more and more people will begin growing their own gardens in their backyards. City dwellers may invest in tower gardens or participate in community gardens. We are moving into a time when people will need and want to take responsibility for growing, at least in part, their own food.

In astrology, Pluto is one of the planets we look to for transformation in society. In 2036, Pluto will be in Aquarius, the sign on invention and innovation, and will opposite the position it was in when fast food was entered in the Merriam Webster dictionary and became a big part of American culture.
We are already examining our relationship to nature and desiring to return to "green living" with Pluto's current transit through Earth sign Capricorn. However, around 2036 when Pluto in Aquarius opposes the position it was in during the 1950s (Pluto in Leo), that's when American society will really have to face its relationship not just with fast food, but packaged and processed foods in general. Who knows, perhaps the food we'll eat then will be even more fake or more processed. Will Aquarian innovation bring us closer to nature, or further from it? I hope we'll see a return of real food, and not the [further rise of] GMO monstrosities.

My gut feeling is that something like Soylent Green won't be too far from the truth. It might not be dead people, but eating recycled waste products and water will be prevalent. Also, there will be a lot of new styles of gardening and new genetically engineered fruits and vegetables. People will be eating a lot less meat, too.

I would say one of the biggest changes in the future of food will take place in the way food is consumed and the eating environment. We are moving towards a more collective and group-oriented dynamic and our communities will reflect this. There will be a movement towards more collective eating establishments — less like a traditional restaurant, and more like a public cafeteria — but coalesced around a certain theme or public interest. While this type of environment may currently exist in the realm of private establishments and clubs, these will be wholly open and inclusive, and reflect society's movement toward grouping around common interests and activities.

After meditating on future menu and restaurant trends, here is what I came up with. First, on menus quirky things that normally don't go together will be put together. Something like peanut butter mashed potatoes or quail egg refried beans.  And I predict these dishes will be unusually delicious.
I see "international chef concept restaurants," in the future too. It adds a whole new meaning to the phrase "dinner theater." It seems to be a group of foodie investors that will suss out really talented and/or celebrity chefs from crazy corners of the world to go on tour and travel to a space that becomes a different restaurant at some regular interval.
Another trend is what I would call, "put-your-life-in-their-hands dining." This is where you go and eat whatever they are cooking. This does not feel like a French five- or seven-course meal; it feels more like a well-proportioned four-course meal. No ordering, no questions, and no complaints! This feels like a very gourmet experience, with very colorful, flavorful foods.
And I'll also add that these three aren't mutually exclusive and could appear as some interesting combinations. I don't believe too far out into the future, either. I predict it will happen sometimes in the next three to five years.

The future of food is a self-fulfilling pleasure trove. Now that it's September, we can go to the farmer's market and feel boundless again. We will buy red beets, still dusty with soil, and carry them home with their bushy green tails wagging. Show me again how roasted beets and rich dark chocolate come together and make a cake so luscious I want to share it with you alone. Show me how to keep the stems, swaddled in damp cloth, so that nothing is wasted. In the future, nothing will be wasted.
I have seen the elders with their basements full of glistening jars. I want a library of delights too. I want to live in a world with you where everything we keep is something we can use. And I see this as the future. It is the re-opening of something visionary. Here, in the quick darkening of Autumn, production and pleasure come hand in hand. And, the work is a joy in and of itself, from our knowing hands to our waiting mouths. It was in the fall that gravity was discovered, there is always more to learn from this Earth and we will discover it if we listen.
