Once known as Canada’s Cowtown, Calgary now has a dining scene that’s advanced beyond its meat-and-potatoes roots. The largest beef producer in Canada boasts a diverse restaurant culture that rivals that in any other major Canadian metropolis, according to Montreal-based food writer Mallory Frayn.
In recent years, chefs and restaurateurs in Calgary have been supporting local producers and ingredients beyond Alberta beef. “From vegetable-forward sharing plates to house-made charcuterie and entrees showcasing game meats, Calgary has variety is in spades,” Frayn says. “It may not have been a food destination five or 10 years ago, but it undoubtedly is now.”
